Ingredients:

2 slices BÄKKER High Protein Bread

1 bowl of button or chestnut mushrooms (thinly sliced)

2 handfuls of baby spinach (or chopped fresh spinach)

1 clove of garlic (crushed)

2 tablespoons Labneh or spreadable cottage cheese (for the base)

1 teaspoon olive oil

Salt, black pepper, red pepper flakes

How to Prepare:

Sautéing: Heat olive oil in a pan. Add mushrooms and sauté on high heat until they release and absorb their liquid.

Greening: Once the mushrooms are browned, add garlic and spinach. Sauté for another 1-2 minutes until the spinach wilts, then remove from heat. Add salt and black pepper.

Preparation: Toast BÄKKER bread slices in a toaster until crispy.

Assembly: Spread cold labneh/cottage cheese on the warm bread slices.

Serving: Generously top the cheese with the warm mushroom mixture you prepared. Sprinkle with a little red pepper flakes, if desired.
