Ingredients:
-
2 very thick slices of BÄKKER High-Protein Bread (or whole mini bread/bagel cut in half)
-
2 Eggs
-
2 tablespoons Labneh or Strained Yogurt
-
1 handful fresh Baby Spinach
-
2 tablespoons Grated Kashkaval or Cheddar Cheese
-
Salt, black pepper, red pepper flakes
-
For topping: Fresh chives or dill
-
-
Instructions:
-
Prepare the Bowls: Press down on the exact center of the BÄKKER bread slices with your fingers or the back of a spoon to create a deep well (bowl). Be very careful not to pierce the bottom of the bread.
-
Base Filling: Spread one tablespoon of labneh (or strained yogurt) on the bottom of each well you created.
-
Green Layer: Place fresh spinach leaves on top of the labneh, pressing down gently.
-
Egg and Cheese: Carefully crack one egg into each bread bowl. Sprinkle grated cheese around the edges of the eggs and add salt/black pepper.
-
Baking: Bake in a preheated oven at 190 degrees Celsius (375 degrees Fahrenheit) until the egg white is fully cooked but the yolk remains slightly runny (approximately 12-15 minutes). Once out of the oven, sprinkle with finely chopped fresh herbs and red pepper flakes, then serve hot.
