I'm imagining a dinner ten years from now...
The children are laughing at the table. The meal served is inspired by Mom's favorite recipe, but with different ingredients. It's a personalized functional menu, prepared according to their own DNA. One plate has a different balance for someone with high protein needs, while another has a different composition for someone requiring more fiber.
Dad says, "I needed to increase my fiber today, I'll have the one with probiotic sauce."
Mom says, "I'll have the gluten-free one with calcium support."
And the child lifts their plate, looks at the label, and says, "How nice, produced with zero waste, they even thought about nature," and they all smile together.
The future of food: It won't just be about what we eat, but shaped by for whom, when, how much, and how we eat. I'm writing this imagining it, but it's not a dream; it's a reality being prepared for the future.
We will build the table of the future together with those who share the same thoughts and ideas as us today.
