Celiac disease is an autoimmune disease in which the immune system reacts abnormally to a protein called gluten. Gluten is a protein found in grains such as wheat, barley, and rye. When individuals with celiac disease consume gluten, the structures called villi lining the inner surface of the small intestine are damaged, and nutrient absorption is impaired.
The cure for celiac disease is to follow a gluten-free diet. This means completely eliminating gluten-containing grains such as wheat, barley, and rye from your diet. Even accidental consumption of gluten causes inflammation in the intestines and malabsorption of nutrients.
