All Stages of High-Protein Bread Production with Bäkker Mix

Bäkker offers a unique flavour with 20 grams or more of protein per 100 grams. The protein content is provided entirely by the Bäkker mix.

Measurements

  • Mix weight: 1,000 g
  • Water: 800 ml (700 ml for rye and wholegrain mixes)
  • Yeast: 40 g
  • Total dough weight: 1,840 g
  • Optional: Sesame seeds

Preparation Steps

  1. Combine mix, water and yeast and begin kneading.
  2. Ensure the dough temperature reaches 27°C at the end of kneading.
  3. After kneading, rest the dough for 10–15 minutes.
  4. Divide the dough into 120 g portions; roll smooth on the surface.
  5. Optionally sprinkle sesame seeds on top.
  6. Arrange shaped dough on trays and proof for 45–60 minutes.

Baking

  • Oven temperature: 165°C
  • Baking time: 12–15 minutes
  • Bake until the product is golden.
